Innovative initiatives to reduce food waste are transforming the gastronomic landscape around the world.

This is particularly the case in the city of Amsterdam in the Netherlands, where the company InStock offers tasty gastronomic experiences created from products that local supermarkets intended for scraps.

Every day for the past five years, InStock employees have been collecting unsold bread, fruit and vegetables from Albert Hein supermarkets, the largest food chain in the country.

I met with Freke van Nimwegen, co-owner of InStock who, along with her business partners, want to offer a new way of dealing with the usual consumption patterns. Here is our conversation :
