The five-diamond CAA/AAA awarded team behind La Tanière has finally opened their long-anticipated, high-end bistro in the old port of Quebec City. Located at the beginning of the antiques sector of downtown Quebec City, Légende par La Tanière is a refined and unique culinary experience.
It is at once one of the most creative and distinguished culinary experience I have had in Quebec City. Everything in the decor has been thought of: textures to marry the menu’s flavours, accessories that suggest a modernist cuisine and a magnificent selection of privately imported wines available by the glass. An environment in perfect accord with the senses that hereupon awaken to the near sight of Légende’s colourful, minutiae detail of their dishes.
Chef Frédéric Laplante is definitely one of the country’s most innovative chefs. He and his wife/business partner Karen Therrien aim for accessible élégance in a new bistro atmosphere. No need for an EnRoute recognition to know that you are eating in one of Canada’s best new restaurants.
What strikes me as the most outstanding experience at Légende par La Tanière is the Chef’s use of indigenous ingredients. Chef Laplante is a master at deconstructing (vacuum-sealed cooking, dehydration, molecular, etc) boreal flavours all while using ancestral cooking techniques. His reputation is founded upon his respect for the product and ability to surprise the palate with traditional Quebec ingredients. No wonder he was awarded Chef of the year by his colleagues of the Société des chefs, cuisiniers et pâtissier du Québec.
