Breakfast smoothie in a bowl

As good as the traditional bowl of cereal but as refreshing as a fruit salad, this recipe has no grains, but it will give you lots of energy to keep you going until the next meal. I added some leafy greens that blend perfectly with all the ingredients, so you won’t even notice it ! Organic tofu ensures your protein intake – my brand of choice is Soyarie, which is GMO certified. I don’t always buy organic products, but when it comes to soy, it’s important to me to do so. Make sure you chose soft silken tofu to get a nice creamy texture.

I absolutely have a crush for Prana’s Machu Pichu exotic fruits & nuts mix, that I sprinkle on the finished product. It brings a crunchy side to the smoothie, and makes it even more pleasant to eat with a spoon. White mulberries and Goji berries makes it all more tasty ! If you don’t have this mix on hand, feel free to use your favorite nuts and dried fruits.

Ingredients (1 smoothie)

125g soft, silken tofu (1/4 packet if you use Soyarie)
1/2 cup frozen raspberries
1/2 fresh mango
1 handful baby spinach (I sometimes use 2 tbsp frozen, chopped Kale)
1/2 banana
1 stevia packet (I use Truvia brand, or some maple syrup)
Pure vanilla extract
Almond milk, to taste (about 1/4 cup; feel free to use any milk)
Prana’s Machu Pichu fruits & nuts mix, or your favorite one (a small handful)

In a blender, combine all ingredients, except for almond milk and fruits & nut mix. Blend well and gradually add almond milk, until the mixture is smooth, but still thick. Remember you must be able to eat it with a spoon, that’s why the use of frozen ingredients is important. When the smoothie is ready, pour it into a bowl and sprinkle with the fruits & nuts mix. Enjoy with a spoon, like a bowl of cereal !
